Easy breakfast casserole with sausage and potatoes, eggs, onions, green peppers, and melted cheddar cheese all baked together in a casserole dish.

Breakfast casseroles are one of my favorite breakfast dishes because you can combine everything into a single dish and bake it all together. I especially like making this dish on Christmas morning because it’s great for a large crowd. I prepare it the night before and pop it in the oven the next morning.
Easy Breakfast Casserole with Sausage and Potatoes Ingredients
- Hillshire Farm Sausage or similar sausage (Smoked, Cheddar Wurst, or Kielbasa are all great choices!)
- Diced Unpeeled Potatoes
- Shredded Cheddar Cheese
- Green Pepper
- Small Yellow Onion
- Minced Garlic
- Heavy Whipping Cream
- Large Eggs
- Thyme
- Salt
- Black Pepper
How to Make Breakfast Casserole
- Preheat oven to 350 degrees Fahrenheit. Lightly spray 13″ x 9″ pan with nonstick cooking spray.
- Diced potatoes, onion, peppers, and slice sausage into coins.
- Cook sausage, onion, green pepper, and minced garlic over the stove on medium-high heat. Add to the casserole dish.
- Whisk together eggs, heavy whipping cream, salt, pepper, thyme, and 1 cup of shredded cheddar cheese. Pour into the casserole dish and stir with sausage and vegetables.
- Top with the remaining cup of shredded cheddar cheese.
- Bake in the oven for 40 minutes until the eggs are set and the potatoes are cooked.
Want to make it ahead?
Prepare all ingredients to step 3, then cover the casserole dish with plastic wrap and store in the refrigerator for up to 24 hours.
Once ready to bake, resume with baking instructions.
I do not recommend freezing this casserole due to the potatoes becoming grainy and watery during the thawing process.
How to Reheat Breakfast Casserole
I recommend reheating individual portions in the microwave.
To reheat in the oven, cover with foil to prevent browning on the top of the casserole. Reheat at 350 degrees Fahrenheit for approximately 30 minutes.

Easy Breakfast Casserole with Sausage and Potatoes
Ingredients
- 13-14 oz Package of Hillshire Farm Sausage or similar sausage, Smoked, Cheddar Wurst, or Kielbasa are all great choices!

- 1 cup Heavy Whipping Cream
- 4 cups Diced Potatoes; about 3 medium-sized potatoes
- 2 cups Shredded Cheddar Cheese, divided
- 1 Diced Green Pepper
- 1 Diced Small Yellow Onion
- 2 tablespoon Minced Garlic
- 1 teaspoon Thyme
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Instructions
- Preheat oven to 350 degrees Fahrenheit. Lightly spray 13" x 9" pan with nonstick cooking spray. Place diced potatoes in a casserole dish.
- Cook sausage in a large pan over medium-high heat until browned. Place in casserole. Add onion and green pepper, season with salt and pepper, and cook until tender, about 5 minutes. Add minced garlic and cook for an additional minute. Add to casserole and stir to combine with cooked sausage.
- Whisk together eggs, heavy whipping cream, salt, pepper, thyme, and 1 cup of shredded cheddar cheese. Pour into the casserole dish and stir with sausage and vegetables. Top with the remaining cup of shredded cheddar cheese.
- Bake in the oven for 40 minutes until eggs are set and potatoes are cooked.
