Orange Creamsicle Cupcakes
- ½ cup Butter
- 1 ½ cups Granulated Sugar
- 3 Large Eggs
- 2 teaspoons Orange Extract
- 2 ¼ cup All-Purpose Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- ½ cup Milk
- ½ cup Orange Juice
- 5-6 Drops Orange Food Color
Orange Buttercream Frosting
- 4 cups Confectioners' Sugar
- ½ cup Butter
- 4 tablespoons Milk
- 1 teaspoon Orange Extract
- Orange Icing Gel, optional
Orange Creamsicle Cupcakes
Preheat oven to 350 degrees Fahrenheit. Prepare cupcake pans by lining with 24 cupcake liners.
In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs and orange extract and beat well. Add milk and orange juice. Sift flour, baking soda, and salt together then slowly mix into the batter. Once combined, mix in 5-6 drops of orange food color.
Spoon cupcake batter into cupcake liners, approximately 3 tablespoons each.
Bake for 14-16 minutes, until tops spring back when lightly touched.
Orange Buttercream Frosting
In a large mixing bowl, add milk, butter, and orange extract. Slowly mix in confectioners' sugar until smooth. May add orange icing gel if desired.
