Looking for cornbread appetizer ideas? Mini cornbread bites are perfect! They are made with sliced deli ham, Swiss cheese, and yellow mustard served in between mini cornbread muffins.
These mini cornbread bites are great finger food for baby showers, bridal showers, super bowl, and especially for holiday parties.
They’re also paired great with chili!
Ingredients for Mini Cornbread Bites
- Cornbread Muffin Mix
- Deli Sliced Ham
- Swiss Cheese Slices
- Yellow Mustard
- Toothpicks
How to Make Mini Cornbread Bites
Prepare cornbread mix according to box directions for mini muffins.
If your box mix does not give directions for mini muffins, lightly grease a mini muffin pan.
Preheat oven to 375 degrees Fahrenheit and bake for 11-13 minutes until golden brown. Allow muffins to cool before handling.
Slice each mini muffin in half. If muffins begin crumbling, place them in the freezer for 15 minutes before slicing for better handling.
Slice Swiss cheese into small squares to fit. I was able to get 4 small squares from each slice.
Using one piece of ham for each sandwich, fold it into a fan shape and keep folding it down in size to fit the mini cornbread muffin.
Layer each cornbread muffin with a slice of ham, Swiss cheese, and a dot of yellow mustard.
Top with the top of the mini muffin and place a toothpick in the center to hold them together.
Mini cornbread sandwich appetizers can be served warm or cold.
