How to Make Chocolate Chip Cookie Dough Cupcakes
- Preheat the oven to 350 degrees Fahrenheit. Line a regular-sized cupcake pan(s) with 24 cupcake liners.
- In a stand mixer with the paddle attachment, or in a large bowl with a hand mixer, mix sugar and shortening together until creamy. Add vanilla extract.
- Sift flour, baking powder, and salt together. Begin slowly adding dry ingredients and milk, alternating until each is well blended.
- Be sure to scrape down the sides of the bowl and the paddle attachment to allow all ingredients to combine evenly. Add chocolate chips and stir to combine.
- In a separate bowl, add egg whites and whip until they form stiff peaks. Fold egg whites gently into the batter.
- Fill each cupcake liner with approximately 3 tablespoons of batter. Bake for 15-18 minutes until cupcakes are cooked through the center.
- Test with a toothpick in the center of a cupcake to check for doneness. Allow to fully cool before icing.
How to Make Chocolate Chip Cookie Dough Frosting
- Cream together butter, shortening, and brown sugar. Add vanilla extract and milk. Add flour and slowly add confectioners’ sugar until desired consistency.
- Mini chocolate chips can be mixed into the frosting or they can be sprinkled on top.
- If you plan to pipe the frosting I recommend sprinkling on top of each cupcake as the tiny morsels easily clog decorator tips.
Which tip to decorate cupcakes?
I used Wilton’s 6B tip for these cupcakes in the photos, but you can also use 1M which is more versatile and allows you to pipe a taller stack of frosting.
How do you decorate a cupcake?
If you plan to use decorator tips, I recommend not adding chocolate chips to the frosting. The mini chocolate chips clog the tips, even with the largest tip opening I had it still clogged it.
The best way to go about this is decorating the cupcake and then sprinkling mini chocolate chips on top. They will look just as pretty!
