    This recipe for stuffed bell peppers with ground beef is one of my absolute favorites because it fills your home with heavenly aromas and instantly creates a mouth-watering sensation throughout your home.

    It includes cooked ground beef, cooked rice, canned corn, canned tomatoes, minced garlic, and spices. This is an easy recipe to learn to feed an entire family or just you and a loved one.

    It’s also the perfect recipe to use to meal prep for the next few days or for a fun home date night.

    What Can You Put In Your Stuffed Pepper With Ground Beef?

    One of the best things that I love about stuffed peppers is that you can load them with your favorite foods! If you don’t like ground beef, you can try ground turkey or even shredded chicken.

    One of my favorite things to do is take some leftovers and stuff them into my peppers for a new meal while using everything in the fridge, so it doesn’t go to waste.

    Ingredients for Stuffed Peppers with Ground Beef

    • Bell Peppers
    • Ground Beef
    • Cooked Rice
    • Canned Corn
    • Canned Rotel Diced Tomatoes and Green Chilis (Whichever level of spiciness you prefer)
    • Canned Black Beans
    • Small Onion
    • Minced Garlic
    • Chili Powder
    • Oregano
    • Cumin
    • Salt
    • Cayenne
    • Shredded Cheese

    How Healthy is This Dish?

    One of my favorite things about this dish is you can make it as healthy as you want. The recipe can change with your needs, or you can ultimately make it up as you go.

    If you are concerned about carbs, you can take out the rice and add in more meat. This dish is versatile and flexible; you have so many options to make this a healthy dish.

    Tips For This Stuffed Peppers Recipe

    Stuffed peppers are pretty straightforward. However, if you find you are struggling with a few things, these tips may help you.

    • Grab a smaller pan to help keep your peppers upright. This will make it easier to stuff.
    • Cook your meat and rice before
    • Always save the tops of your bell peppers. You can eat every part of the bell pepper minus the green stem.
    • If you are on a time crunch, you can precook your peppers. Stick your bell peppers into the oven for a few minutes while cooking your rice and meat.

    These tips should help you perfectly cook your stuffed peppers with ground beef. If you don’t have a small enough pan, you can use a cupcake pan to stick individual peppers in the spots!

    Uncooked Stuffed Peppers with Ground Beef

    The Best Recipe For Stuffed Bell Peppers I Have Found

    1. Cook rice according to package directions.
    2. Preheat the oven to 350 degrees.
    3. In a large pan over medium-high heat, brown the ground beef then drain. Add onion and cook for 5 minutes, then add minced garlic and cook an additional 60 seconds.
    4. Add corn, Rotel, black beans, rice, and remaining seasonings. Stir to combine and heat through. Remove from the heat.
    5. Rinse and then cut the tops off of each bell pepper. Use a spoon to remove the seeds and ribs from the inside of each pepper.
    6. Place bell peppers on a paper towel in the microwave and cook for 2-3 minutes until they are slightly softened, but still hold their shape.
    7. Arrange them standing upright in a pan with deep sides or a cupcake tray. This will help make stuffing them easier.
    8. Add ground beef mixture to the inside of each bell pepper. Fill to the top and then sprinkle with shredded cheese.
    9. Bake in the oven for 20-25 minutes until the centers are heated through and peppers are tender.

    Ingredients

    • 6 Bell Peppers
    • 1 lb Ground Beef
    • 1 ½ cups Cooked Rice
    • 1-15.25 oz Can of Corn
    • 1-10 oz Can of Rotel Diced Tomatoes and Green Chilis, Whichever level of spiciness you prefer
    • 1-15 oz Can of Black Beans
    • 1 Small Onion, diced
    • 1 tbsp Minced Garlic
    • 1 tbsp Chili Powder
    • 2 tsp Oregano
    • 1 tsp Cumin
    • 1 tsp Salt
    • Pinch of Cayenne
    • 1 cup Shredded Cheese

    Instructions
     

    • Preheat the oven to 350 degrees Fahrenheit.
    • Brown ground beef in a large pan over medium-high heat for about 7-8 minutes. Drain grease.
    • Add onion and cook for 5 minutes, then add minced garlic and cook 60 seconds. Add corn, Rotel, black beans, rice, and remaining seasonings. Stir to combine and heat through. Remove from the heat.
    • Rinse and then cut the tops off of each bell pepper. Use a spoon to remove the seeds and ribs from the inside of each pepper.
