The Best Recipe For Stuffed Bell Peppers I Have Found

  1. Cook rice according to package directions.
  2. Preheat the oven to 350 degrees.
  3. In a large pan over medium-high heat, brown the ground beef then drain. Add onion and cook for 5 minutes, then add minced garlic and cook an additional 60 seconds.
  4. Add corn, Rotel, black beans, rice, and remaining seasonings. Stir to combine and heat through. Remove from the heat.
  5. Rinse and then cut the tops off of each bell pepper. Use a spoon to remove the seeds and ribs from the inside of each pepper.
  6. Place bell peppers on a paper towel in the microwave and cook for 2-3 minutes until they are slightly softened, but still hold their shape.
  7. Arrange them standing upright in a pan with deep sides or a cupcake tray. This will help make stuffing them easier.
  8. Add ground beef mixture to the inside of each bell pepper. Fill to the top and then sprinkle with shredded cheese.
  9. Bake in the oven for 20-25 minutes until the centers are heated through and peppers are tender.

  • 6 Bell Peppers
  • 1 lb Ground Beef
  • 1 1/2 cups Cooked Rice
  • 1-15.25 oz Can of Corn
  • 1-10 oz Can of Rotel Diced Tomatoes and Green Chilis (Whichever level of spiciness you prefer)
  • 1-15 oz Can of Black Beans
  • 1 Small Onion, diced
  • 1 tbsp Minced Garlic
  • 1 tbsp Chili Powder
  • 2 tsp Oregano
  • 1 tsp Cumin
  • 1 tsp Salt
  • Pinch of Cayenne
  • 1 cup Shredded Cheese

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Brown ground beef in a large pan over medium-high heat for about 7-8 minutes. Drain grease.
  3. Add onion and cook for 5 minutes, then add minced garlic and cook 60 seconds. Add corn, Rotel, black beans, rice, and remaining seasonings. Stir to combine and heat through. Remove from the heat.
