    Instant Pot Ginger Pepper Steak

    Quick and easy recipe to make Instant Pot ginger pepper steak with green peppers, onion, garlic, and ginger mixed in a flavorful, savory teriyaki sauce served over rice.

    Instant Pot Ginger Pepper Steak

    Pepper steak is the perfect dish for a quick weeknight meal after getting home from work.

    The beef is tender, the vegetables have a perfectly cooked bite to them, and the sauce is more like a flavorful gravy.

    This recipe tastes just like the pepper steak you get at a Chinese buffet or takeout. It’s delicious!

    The great thing is you can easily double the recipe if you want more for a larger family or to have leftovers – that’s what I do!

    Instant Pot Ginger Pepper Steak

    Ingredients for Instant Pot Ginger Pepper Steak

    • Stew Beef or Sirloin
    • Olive Oil
    • Garlic
    • Ginger
    • Onion
    • Green Pepper
    • Homemade Teriyaki Sauce (or try this sugar-free Teriyaki sauce!) I’ve also used PF Chang’s Teriyaki sauce from the grocery and love it!
    • Water
    • White Rice

    Teriyaki Sauce Ingredients:

    • Water
    • Soy Sauce
    • Light Brown Sugar
    • Honey
    • Ground Ginger
    • Garlic Powder
    • Cornstarch

    The meat department didn’t have steak strips that I was looking for so I used stew meat and cut the beef down into smaller strips.

    Sirloin works just as well. I typically use sirloin and it turns out very tender.

    How to Make Instant Pot Pepper Steak and Rice

    Rice

    The rice can be cooked in a rice cooker or steamer, but if one is unavailable I have a stovetop method as well.

    Bring 1 and a half cups of water to a boil over the stove and add ¾ cups of rice.

    Reduce to medium-high heat, cover, and let simmer for approximately 18-20 minutes. Once cooked, fluff rice with a fork. Set aside.

    To manage time best, have the rice ready to cook at the same time the beef starts pressure cooking in the Instant Pot.

    Prepare your meat by cutting beef into strips. Add 1 teaspoon olive oil to the Instant Pot on the Saute setting.

    Add beef once it is hot and cook until it is browned on all sides, about 2 minutes each side. You will likely need to work in batches.

    Add beef broth to the Instant Pot and scrape up any tidbits left from the meat. Add in the garlic, ginger, and beef, close the lid and vent.

    Set it to Meat/Stew, adjust to high, and set the timer for 15 minutes.

    Meanwhile, rinse the green pepper.

    Remove the seeds and stem from the green pepper and dice into ½″ wide pieces. Cut the onion into ½″ pieces as well.

    Once the beef is done, quick-release the vent, and add the green peppers and onions to the Instant Pot.

    Stir and place the lid on for 5-8 minutes until the green peppers and onions are tender.

    Add in teriyaki sauce and cornstarch. Allow sauce to thicken before serving.

    Ingredients

    • 1 lb Stew Beef, or Sirloin, cut into thin strips
    • 2 tsp Olive Oil
    • 1 tbsp Minced Garlic
    • 2 tsp Minced Ginger
    • 1 Green Pepper
    • 1 Small Onion
    • ½ cup Homemade Teriyaki Sauce
    • 1 cup Beef Broth
    • 2 tsp Cornstarch

    For Rice

    • ¾ cup Jasmine Rice or White Rice
    • 1 ½ cup Water

    Instructions
     

    • Rice
    • Cook rice in rice cooker/steamer -OR- you can bring 1 and a half cups of water to a boil over the stove, add ¾ cups of rice, reduce to medium-high heat, cover, and let simmer for approximately 18-20 minutes. Once cooked, fluff rice with a fork. Set aside.
      **It’s best to have the rice ready for cooking at the same time as the beef starts pressure cooking in the Instant Pot.
    • Ginger Pepper Steak
    • Prepare your meat by cutting beef into strips if not already done so. Add 1 tsp olive oil to the Instant Pot on the SAUTE setting. Add beef once it is hot and cook until it is browned on all sides, about 2 minutes each side. You will likely need to work in batches.
    • Add beef broth to the Instant Pot and scrape up any tidbits left from the meat. Add in the garlic, ginger, and beef, close the lid, and vent. Set it to MEAT/STEW, adjust to high, and set the timer for 15 minutes.
    • While the beef cooks, prepare the green pepper and onion by rinsing underwater. Remove the seeds and stem from the green pepper and dice into ½" wide pieces. Cut the onion into ½" pieces as well.
    • Once the beef is done, quick-release the vent, and add the green peppers and onions to the Instant Pot and stir. Place the lid on for 5-8 minutes until the green peppers and onions are tender. Add in teriyaki sauce and cornstarch. Allow sauce to thicken before serving.
