How to perfectly cook Instant Pot pork chops made with boneless pork chops or butterflied chops that you can serve plain or with a tasty sauce.

This recipe for Instant Pot pork chops makes your pork chops tender and juicy. Tender enough to cut with a fork or even pick up and bite off as my son did.
It does not cook them long enough to become pulled pork which is the perfect amount of tenderness I was looking for.
The gravy is absolutely optional as it is cooked separately from the pork chops.
Ingredients for Instant Pot Pork Chops
- Boneless Pork Chops, Pork Loin, or Butterflied Chops
- Chicken Broth
- Salt & Pepper
- Nonstick Cooking Spray
Ingredients for Spinach and Mushroom Gravy:
- Reserved Chicken Broth from the Instant Pot
- Flour
- Butter
- Half & Half
- Baby Bella Mushrooms
- Baby Spinach
- Thyme
- Salt & Pepper
How to Make Instant Pot Pork Chops
- Pat pork chops dry with a paper towel and season both sides with salt and pepper.
- Set Instant Pot to Saute setting. Add 1 tablespoon of oil to the bottom of the pot and once hot, add pork chops. You will likely need to do this in batches. I was able to do 2 at a time. Brown on both sides, about 2-3 minutes per side. Set the pork chops aside.
- Add chicken broth to the bottom of the pot and scrape up any tidbits left behind. This will prevent the dreaded ‘Burn’ error from happening as it cooks. Add a metal trivet to the bottom of the pot. Place pork chops in Instant Pot on top of the trivet.
- Place the lid on top and seal the vent. Set to meat/stew option and adjust heat to high. Set the timer for 7 minutes. After it cooks, allow it to natural release for 5 minutes then fully open the vent to quick release the pressure. Remove the lid and serve.
Internal Temperature for Pork Chops
The USDA recommends pork chops reach a temperature of at least 140 degrees Fahrenheit for safe consumption.
Medium-Rare: 145-150 Degrees Fahrenheit
Medium: 150-155 Degrees Fahrenheit
Medium-Well: 155-160 Degrees Fahrenheit
Well-Done: 165 Degrees Fahrenheit

Ingredients
- 4 Boneless Pork Chops, Pork Loin, or Butterflied Chops about 1″ – 1 ¼″ thick
- 1-14.5 oz Can or 1 ½ cups of Chicken Broth
- Salt & Pepper
- Nonstick Cooking Spray
Instructions
- Pat pork chops dry with a paper towel and season both sides with salt and pepper.
- Set Instant Pot to Saute setting on medium heat. Add 1 tablespoon of oil to the bottom of the pot and once hot, add pork chops. Brown on both sides, about 2-3 minutes per side. Set the pork chops aside. Press Cancel on the Instant Pot.
- Add chicken broth to the bottom of the pot and scrape up any tidbits left behind. Add a metal trivet to the bottom of the pot. Place pork chops in Instant Pot on top of the trivet.
- Place the lid on top and seal the vent. Set to meat/stew option and adjust heat to high. Set the timer for 7 minutes. After it cooks, allow it to natural release for 5 minutes then fully open the vent to quick release the pressure. Remove the lid and serve.
